using tape w/o saturating

If i just use R2R on every channel well under the saturation level of the preset. Am i going to be missing out on a lot of the sound.
I know that tape wasn't always recorded hot and i don't want to push every track. but I would like more than just the eq effect of tape.
Also worth noting my levels are at an average of -20. I know that the Studer 800 has presets down well below that. But i like the way the 820nab sounds better.
