Sorry for this dumb question: is it possible on Nebula Pro/Server (on mac) type the wanted value instead to move a fader?

No, it won't happen in the near future.

Do you know which is the modifier to hold down for fine adjustments?

use shift key for fine parameter adjustment.

on PC it is the [SHIFT] key.

I've just tried and also on mac it works on the same way.
